Our favorite, and tastiest (!) tradition going into our 4th year is the homemade cookies made especially for each team by the Positive Care Center's own
Lisa Motz, RN!!

Last year we had requests for her ginger molasses cookie recipe so here it is, enjoy!

3/4 cup butter
1 cup granulated white sugar
1 egg
1/4 cup molasses
2 tsp baking soda
1 tsp salt
1 tsp ground ginger
1/2 tsp cinnamon
1/4 tsp cloves
2 1/4 cups all purpose flour
1 1/2 cups currants
1/2 cup chopped crystallized ginger
Additional sugar for rolling

Preheat oven to 375 degrees

Cream together the butter and sugar until fluffy.  Blend in the eggs and molasses
until smooth.  Stir together the dry ingredients and add to the butter mixture. Mix until incorporated.  
Stir in the currants and chopped ginger.

Form the dough into balls, approximately 1 Tbsp of dough, and roll in additional sugar.
Place on parchment lined cookie sheets, about 2 inches apart.

Bake for 8-10 minutes, longer if you want a crisper cookie.  Let cool on
cookie sheets for a couple minutes, then remove and finish cooling
on racks.
